750 grams gooseberries
170 grams sugar
750ml cream
½ tot Sherry


1. Cook fruit over low heat for 30 minutes with a little water
2. Mash fruit finely, then stir in sugar and stir over low heat until sugar dissolved
3. Puree fruit and chill
4. Whip cream until stiff then fold in sherry to taste and the fruit puree.
5. Serve in individual glasses with wafer biscuits.
