1 Cup maize meal
50g Corn off the cob
400ml Vegetable stock
1 Tablespoon butter
1 Tablespoon parsley – chopped
2 Eggs – beaten
Sunflower oil for deep frying
Ground white pepper


1. Bring the stock in a small pot to the boil.

2. Add half the maize meal to the stock and using a whisk mix until smooth until no lumps are visible.

3. Stir in the rest of the maize meal slowly until the mixture is smooth and starting to stiffen.

4. Add the corn and turn the heat low to simmer and cover the pot and let simmer for 10 minutes (stirring constantly to make sure that the mixture does not burn/stick to the bottom of the pot).

5. Remove from pot and transfer onto a shallow baking sheet/tray and smooth out on the top to make a 2cm layer.

6. Cool down and cut into rectangular shape.

7. Dust the ‘mealie sticks’ with flour, dip in the egg mix then coat with breadcrumbs.

8. Deep fry at 160 degrees Celsius until golden brown – five to eight minutes.

9. Drain using paper towel for excess oil.
