Nicki Minaj’s: Fried Chicken

Ingredients

1.8kg Bag of whole chicken pieces
1 Teaspoon of salt
1 Teaspoon of pepper
2 Cups of buttermilk
Self-raising flour
Vegetable oil

Method
Sprinkle the chicken pieces with salt and pepper, place them in a shallow dish or zip-top plastic bag, and add the buttermilk. Cover or seal, and chill for at least two hours. Heat the oil in a deep skillet and remove the chicken from the buttermilk, shaking off any excess. Dredge the chicken in the flour, and fry a few chicken pieces at a time for about six minutes on each side in oil that isn’t too hot. When browned, place in an oven dish, and once the all the pieces are done put them in the oven at 180°C and bake, covered, for about 10 minutes, until the chicken is cooked. Serve with a green salad.
