Caitriona Balfe Cauliflower Bread

Caitriona Balfe is an Irish actress and model. She is best known for her role as Claire Fraser in the series Outlander, for which she won two People’s Choice Awards and two Saturn Awards. She was born October 4, 1979 in Dublin, Ireland, and, in addition to English, speaks French and Irish Gaelic. She has also worked for Dolce & Gabbana, Chanel, Moschino, Narciso Rodriguez, and Marc Jacobs. Being health conscious, she’s a fan of the low-carb meals, and that’s why this week we’re bringing a healthy flatbread.

Three cups of cauliflower (about one medium head)
Two teaspoons of olive oil
Half a cup of shallots (minced)
Two eggs
250ml grated soft cheese (mozzarella or gouda)
One teaspoon of dried herbs
A third of a teaspoon of salt
A quarter of a teaspoon of black pepper

Preheat your oven to 190ºC, and steam the cauliflower until soft (about five minutes) and drain completely. Using a fork, mince the cauliflower until you have a crumbly texture, then add the minced shallots, the half a cup of the cheese, the herbs, salt, and pepper. Add eggs and mix in until a batter has formed. Spread the dough into a rectangle of about half to a centimetre thick, on top of a greased baking sheet and bake for 10 – 12 minutes or until set. Turn your oven to grill, scatter the remaining cheese over top of the cooked cauliflower bread and grill for another one to two minutes until golden brown. Allow the bread to cool slightly, then slice and serve.
