1kg Oxtail
Oil for frying
½-1 Cup of flour
250ml Beef stock
160ml Red wine
¼ Teaspoon of cloves (Powder)
2 Bay leaves
4 Garlic cloves
4-6 Cocktail onions
2 Carrots, peeled and sliced
Sea salt and freshly ground black pepper to taste


Roll clean (excess fat removed) pieces of oxtail in flour, shake off, and set aside. Brown the oxtail pieces in batches in a heavy-based saucepan over moderate heat. Add the rest of the ingredients, sprinkle with salt and pepper, and cover and cook over low heat for approximately two to three hours, or until the meat is tender.
