Lemon Cake For Vegans
This lemon cake is a must try, even if you are not vegan! The lemon cake also works well if you replace the flour and baking powder with gluten-free alternatives.
150g icing sugar
½ lemon, juiced

Heat the oven to 180 degrees celcius. Oil your loaf tin and line it with baking paper. In a bowl, mix the flour, sugar, baking powder and lemon zest. Add the oil, lemon juice and cold water. Mix well until smooth. Pour the cake mixtures into the loaf tin and bake for 30 minutes. Once the cake has baked, remove it from the oven and allow to cool for 10 minutes. Remove from the loaf tin and place it on a wire rack to cool.

For the icing, sieve the icing sugar into a bowl. Mix enough lemon juice to make the icing thick enough to pour over the loaf. Don’t make the icing too thin as it will run off the cake before it has had time to set.
