CONSIDERING that Gareth Cliff is a very busy man, we’re not surprised that when he does whip something up in the kitchen, it quick, easy and healthy. This week’s recipe is his signature ‘dish’ – Salad For One!

Gareth Cliffs’ Salad For One!
Mixed lettuce leaves
TAKE one or two tomatoes. Dice them into small chunks – about the size of your thumb. Alternatively, use a handful of mixed baby tomatoes and halve them. Take the avo and cut into quarters which you then dice to match the size of the tomato chunks. Season with salt, pepper and a splash of balsamic vinegar. Arrange it all in a nice bowl with the lettuce and garnish with some fresh basil leaves. Ta-daaaa! Isn’t that great?
