Shortcut pork in Coca-Cola
Ingredients
2 Tablespoons olive oil
2 x Garlic cloves
2 x 250g deboned pork cutlets
2-3 Bay leaves
1 Can Coca-Cola
Method:
Warm the olive oil in a frying pan over medium to high heat. Salt and pepper the pork culets, place in the warm pan and cook for two to three minutes each side until sealed. Fry the whole garlic cloves at the same time for flavour. Pour over enough Coke to cover the pork. You may not need the whole can. Add the bay leaves and let it simmer until the Coke is reduced. Turn off the heat, cover the pan with a lid and leave the pork on the plate until the heat has subsided. The pork must not be cold. Serve with roasted potatoes and green salad.
