
Broccoli And Cheddar Quiche

Ingredients
2 Cups sliced fresh mushrooms
1 Cup chopped onions
2 Cups chopped broccoli
5 Eggs
350ml Low-fat fresh cream
1/3 Cup milk
2 Cups Cheddar cheese, grated
1 Frozen deep dish pie crust (22.5 cm)
Method:
Pre-heat oven to 180ºC. Cook vegetables in a skillet with a dash of oil on medium heat for five minutes or until crisp-tender, stirring occasionally. Beat the eggs, the cream and milk in a separate bowl until well blended. Add it to the cooled vegetable mixture, add the grated cheese, mix thoroughly and pour into the pie crust. Place on baking sheet, so that, if it boils over, it will land on the sheet and not dirty the oven. Bake 40 to 45 minutes until golden brown. Let stand 10 minutes to set before cutting. Serve with a green salad and a whole wheat roll.
