1¼ Cups flour
6 Tablespoons castor sugar
½ Cup butter, cut into small pieces
1 Tablespoon cold water
2/3 Cup heavy cream
2/3 Cups sugar
Grated rind of two medium sized lemons
9 Tablespoons lemon juice
Icing sugar for dusting
Place the flour and sugar in a bowl and rub in the butter, using your fingertips. Add the water and mix until a soft pie dough has formed. Wrap and refrigerate for 30 minutes. On a lightly floured surface, roll out the dough and line a loose bottomed quiche pan. Prick the pie dough all over with a fork and chill for 30 minutes. Line the pie shell with foil and dried beans and bake in a preheated oven of 180ºC for 15 minutes. Remove the foil and beans, put the pie shell back in the oven, turn off the stove and leave to brown.
Beat the eggs and sugar until fluffy. Add the lemon juice and grated rind. In a separate bowl, beat the cream until stiff and then mix it well with the egg mixture. Place the pie shell on a cookie sheet, place it on the oven shelf, and then pour in the lemon mixture. It is a very watery filling and can mess easily. Push the cookie sheet back on the oven shelf, close the oven and let it bake for approximately 20 minutes until just set. Let it cool and dust liberally with confection sugar.
