Schalk Burger – Game Babotie

“THIS dish holds such good memories for me and my family. We owned a farm in the Karroo and we went there very often – particularly during school holidays. Later, as we grew up, we hunted and then we worked the meat ourselves in the butchery on the farm. It was great being together, all working together and appreciating the hard work a butcher does! We made our own biltong, droëwors etc., as well as traditional game lunches. This was one of our favourites.”

Serves Eight to 10
Three thick slices white bread, crusts removed
45ml cooking oil
1kg game mince (any type)
1kg pork mince
Two onions, chopped
Two carrots, grated
60ml medium curry powder
20ml ground turmeric
30ml apricot jam
60ml almonds, chopped and toasted
30ml lemon juice, freshly squeezed
Salt and pepper to taste
Four Lemon leaves
Preheat the oven to 180ºC. Soak the bread in half of the cream. Heat half of the oil and butter in a large saucepan, then brown the game and pork mince. Set aside. In a frying pan, fry the onions with the remaining oil and butter until soft. Add the carrots, curry powder and turmeric and mix well. Add the onion mixture to the meat, and then add the jam, almonds and lemon juice. Season well. Add the bread along with the cream in which it soaked. Spoon the mixture into an oven dish.
Whisk together the remaining cream, buttermilk and eggs. Pour the custard over the meat, then tuck the lemon leaves into the custard topping. Bake in the oven for 45 minutes or until the topping is golden-brown and set.
Serve with yellow rice and a fresh salad.
