DJ Fresh – Spicy Omelette

“I FONDLY recall omelettes from my childhood as they were something I could ace and also meant that I wouldn’t burn the house down. We lived in Gaborone, Botswana, at the time and I remember making omelettes from the tender age of 10 already. I would come home from school, source any leftovers in the fridge and rustle up my omelette.” – DJ FRESH
A knob of butter
Two or three eggs
A Few spoons of Texas chilli corned beef
Half an onion (sliced and lightly fried)
ADD the butter to a frying pan. Break the eggs into a bowl and quickly whisk them. Pour the egg mixture in the pan and wait for the bottom layer to half-set. Spoon the corned beef and onion over the top. Fold the omelette in half over itself and allow to set completely. It must be yellow and shiny. Serve with a salad of your choice.
